In a short space of time, this warm, welcoming venue has become one of Valencia’s true wine temples. Sergio Rozas’s project (Somos Raro) brings together more than two hundred labels and around twenty wines by the glass, with a clear focus on small producers and distinctive wineries. The menu is the perfect accompaniment, based on cured meats, cheeses and finely tuned seasonal dishes. Standout bites include the brioche with Cullera prawn and pork jowl and the confit leek with sobrasada romesco. Service is attentive and genuinely passionate. A must for wine lovers.
