Tucked away in a hidden passage in El Born, this intimate, welcoming space offers a different kind of experience built around plant-based cuisine. Argentine chef Máximo Cabrera, trained in biology, draws on his scientific background to bring out the full potential of vegetables, working with textures and fermentations. Mushrooms, vegetables, tempeh and flowers take centre stage in original, flavourful creations. The à la carte menu sits alongside two tasting menus, highly recommended for a deeper understanding of the concept. Service is friendly and walks you through each dish, while the wine list focuses on local natural and biodynamic labels. It’s hard not to leave impressed.
