Uruguayan chef Nicolás Zas, with experience in restaurants across Australia, brings together in this project his Río de la Plata roots, the Mediterranean heritage of his Italian family and the know-how gathered over three continents. His signature cuisine is grounded in respect for territory and seasonality. Working with organic, locally sourced ingredients, he applies ageing, fermentation and live-fire techniques to create dishes full of character. Guests can choose between three tasting menus, accompanied by a wine list that focuses on natural wines from small Catalan producers, emblematic Spanish labels and the occasional nod to Uruguay. A soulful place that does not disappoint.
