What began in 1983 as a tapas bar has gradually evolved into a fully-fledged restaurant. It is located in the historic centre of Cuenca, inside a 17th-century palace that also offers rooms. The cuisine focuses on local tradition, with dishes such as morteruelo (meat stew), pisto manchego (ratatouille), zarajos (grilled lamb intestines) and suckling lamb shoulder and chops, combined with more modern proposals. In season, mushrooms take centre stage. The best option is to book a table by the window to enjoy the spectacular panoramic views over the Hoz del Huécar.
