Don't miss their morteruelo (a meat stew), marinated partridge, snails, lamb chops, beef cheeks, pig's ear or mushrooms when in season. But whatever you order, you can't go wrong. There is only one bar—behind which Ángel Millán, a lifelong tavern owner, welcomes guests with warmth and knowledge. They don't take bookings and are closed on weekends. This gastronomic temple of honest cooking is a must-visit.
