Their proposal revives almost forgotten dishes and makes a strong case for marinades and well-crafted stocks. Among the highlights are the abrandada white prawn potato salad, gilderos eggs, tripe pasty, turbot in free-range cockerel pepitoria, Catalan-style wild pigeon and the magnum of arbutus fruit ice cream.
