The concept here is simple: a surprise tasting menu served at a white marble counter for twelve diners. Víctor prepares everything to order, using the finest Galician products of the day with nods to his Andalusian roots. The menu always begins with Ibérico ham and his grandmother’s legendary croquettes, while stocks and broths bubble away on the stove. There is no wine list, the fun lies in letting the chef choose a blind pairing, revealed only at the end. The result: different, flavourful and full of playful charm.
