This young project was born from a clear idea: to restore the surrounding land and bring its best produce to the table through a Basque cuisine rooted in tradition. In Aia, they work the vegetable garden, orchards and beehives to create a proposal closely tied to the landscape and the seasons. The à la carte menu is short, changes frequently and treats the raw ingredients with respect, without disguising them. It is worth keeping an eye on the off-menu dishes, the offal and an extensive, adventurous wine list with very reasonable prices. A hidden gem that makes you want to return before you have even left.
