Project led by chef Ignacio Montes, known as Coco, who trained in his later years at the prestigious L'Arpège in Paris, one of the world’s great temples of vegetable cuisine. The menu and two tasting options focus on seasonality and product and give absolute prominence to vegetables, though there’s also room for meat and fish. The chef’s mastery of stocks and sauces stands out, full of clear, spiced and fruity nuances. The distinctive dining room evokes an old family home, with antique furniture and subtle contemporary touches. Fresh, distinctive cooking that breaks away from the conventional.
