Project led by Chef Ignacio Montes, alias Coco, who worked during the last years at the prestigious L'Arpège in Paris. The à la carte menu and the two tasting menus are based on seasonal product, with vegetable dishes taking centre stage, followed by sauces, with well-defined and well-seasoned flavours.
