Aaron Ortiz and Jaione Aizpurua are behind one of Navarra’s most personal culinary proposals. The tasting menus change with the seasons, though the idea remains the same: local ingredients, love for vegetable gardens, sensitivity and contemporary technique to interpret the territory without disguising it. Ingredients such as Mejana onions, Feo tomatoes from Tudela, Corella leeks or beans take centre stage. The  dessert Transformación brings the journey to a delicate and coherent close. The dining room, cosy and modern in style, is paired with warm, precise service and a thoughtfully curated wine list. A visit that leaves a lasting impression.
