Considered one of the great temples of Segovian cuisine, this restaurant occupies a 15th-century building and features more than a dozen dining rooms, as well as a bar at the entrance and its signature wood-fired ovens. Founded in 1895, it is the oldest restaurant in Castile and León and is now run by Marisa Duque and her son Luis, the fourth and fifth generation of the family. Its roast suckling pig is the emblem of the house, alongside lamb, Castilian garlic soup, crab bisque, and La Granja beans. History, tradition and expertise come together in every dish.
