With over a century of history, this is probably Segovia’s most famous restaurant. Suckling pig is their star dish. In this legendary tavern, Cándido, the founder, used to carve the suckling pig with the edge of the plate, a tradition proudly carried on today by his grandson Cándido. The experience is elevated by old-school, impeccable service and a well-stocked wine cellar. The classic dining rooms with chequered tablecloths have hosted countless notable guests, both national and international. There’s also a terrace facing the Roman aqueduct. Booking is a must. A true institution that everyone should visit at least once in their lifetime.
