With over a century of history, this is probably the most famous restaurant in Segovia. Suckling pig is the star dish and, in this legendary tavern, tradition rules: its founder, Cándido, used to carve it with the edge of a plate, a ritual still followed today by his son Alberto and grandson Cándido. Top-level service and a very well-stocked wine list complete the experience. The classic dining rooms have welcomed some of the most distinguished figures from both the national and international scene. Two terraces, balconies and large windows overlooking the Roman aqueduct add to the appeal. Booking is essential. A true institution to visit at least once.
