In a small space with a lively bar, high tables and a charming dining room with contemporary décor, Chef Abel Mora blends Japan, Peru and Aragón without hesitation. The result: lamb maki with borage, foie gras nigiri with Pedro Ximénez reduction or ceviche with crispy squid. The nigiri, both hot and cold, and the tartares made to order are worth the visit alone.
