Rodrigo de la Calle, an award-winning chef from Madrid and a pioneer of plant-based cuisine, has been proving for over a decade that plant-based dishes also have a place in haute cuisine. There is no set menu; instead, there are several tasting menus that change with the seasons and creatively make the most of ingredients that are usually overlooked. For diners who are less plant-based, there is the option to enhance the experience with animal protein. Drinks can be paired with plant-based beverages, wines or a mix of both. From Tuesday to Friday at lunchtime, this temple to plant-based cuisine transforms into Barbecho, a rice restaurant serving small plates and rice dishes.
