This is the life project of the Sandoval brothers. Mario as head chef, Diego as head of the dining room and Rafael as sommelier form a perfect trio that orchestrates one of Madrid’s finest gastronomic experiences. Set in a spectacular space designed to be explored throughout the visit, they present creative, refined and technically impeccable cuisine through two tasting menus, one of them vegetarian/vegan. Both reinterpret Madrid’s culinary tradition, featuring the iconic lacquered suckling pig roasted in a wood-fire oven. To crown the experience, the restaurant boasts one of the best wine cellars in Spain, with over three thousand labels. Every detail is designed for pure enjoyment.
