In the heart of Tudela, this restaurant serving seasonal Navarran cuisine puts the vegetable garden at the heart of its identity, approached with a contemporary perspective and the occasional international influence. Vegetables take the lead: artichokes, charcoal-grilled asparagus, baby onions and a vegetable stew prepared with more intention than folklore. There are also dishes such as cold anchovy lasagne, Piquillo peppers with tuna tartare or Tudela-style pig’s trotters.
